Beet-apple borsch harvest

Ingredients

beet 2 kg.
bulb onions 1 kg.
carrot 1 kg.
sour apples (preferably Antonovka) 2 kg.
vegetable oil (for frying) 400 ml.
vegetable oil (for extinguishing) 100 ml.
sugar 5 tbsp. l.
salt 2 tbsp. l.
black peppercorns 10-15 pcs.

Cooking method

  • It is advisable to take juicy vegetables for this recipe, I give the amount of ingredients with a net weight, I take a little more before cleaning.
  • Peel the carrots, grate on a medium grater or a food processor. Peel the onion, cut into half rings or chop in a food processor. Heat 400 ml. oil, fry the carrots and onions, about 30 minutes.
  • During this time, peel and chop beets and apples on a grater or in a combine. Add beets, apples, 100 ml to the carrot-onion mixture. vegetable oil, sugar and salt, simmer for about 50 minutes or vegetables until cooked (I took 40 minutes today). As soon as it is ready - add peppercorns, warm up for another 2-3 minutes, put in sterilized jars, roll up and wrap until cool.
  • Bon Appetit!

The dish is designed for

10-12 jars of 0.5 liters.

Note

This is a very tasty preparation, who does not know - you will never guess that there are apples and there are no tomatoes or vinegar in it.
The number of jars at the exit depends on the juiciness of the vegetables. If the vegetables are completely dry, you can add 0.5 liters of boiling water at the beginning of stewing, during the cooking the water will boil away and the vegetables will not burn.

the proportions of sugar and salt this is a purely individual matter, and if at all, in general, then yes, all proportions are verified specifically for the taste of my and my family, all the recipes for the blanks that I share have been tried on my family more than once, until I will adjust the taste and don’t check how well the blanks are, I don’t post recipes
