Ingredients

Ryzhiki 1 kg.
Salt is neither fine nor iodized 50 gr.

Cooking method

  • 1. To clean the mushrooms from debris.
  • 2. Transfer to a pillowcase or gauze, or any convenient fabric, I transfer it to a laundry net.
  • 3. Rinse the mushrooms by rinsing in plenty of water.
  • 4. Then hang a bag of mushrooms for a couple of hours to glass the water.

  • 5. Spread the mushrooms on a towel or sheets to drain the excess water. Mushrooms dry out on the fabric pretty quickly. If there are not many mushrooms, you can dry them on a paper towel.
  • 6. Put the mushrooms in a container, depending on the amount of mushrooms, I do in an enamel saucepan. Lay with the feet up, sprinkling each layer with salt.
  • 7. Put a load on top of the mushrooms, cover with a lid and put in a refrigerator or a cool place for 2-3 days.

  • 8. If there is a place where you can store it, you can leave it in a saucepan, but I put the mushrooms in jars, slightly tamping, you do not need to tamp much. If there is not enough brine, then add to the fullness of the cans from the pan, there will be plenty of it.

  • 9. Put gauze on top of each jar and drop a drop of vegetable oil on it. Gradually the oil is absorbed by the gauze and forms a protective film that prevents fungi from mold. You don't need a lot of gauze, otherwise it will strongly absorb the brine from the mushrooms, which again contributes to the formation of mold.

  • 10. Close the jars with nylon caps and store in a cool place or in the refrigerator. You can eat it in a month.

I tried many recipes for making saffron milk caps, and I was constantly not satisfied with something, sometimes sour, sometimes bitter, sometimes too salty, sometimes moldy very quickly, etc. I already wanted to abandon this idea, like three years ago, in search of mushrooms, wandered into a village where no more than ten people live. I got into a conversation there with a local resident about the method of salting saffron milk caps, she told me this method, which I described above, and she does not salt it with jars, like me, but with buckets. I did everything as she said, and for the first time I got very tasty mushrooms, now I salt it this way, the mushrooms are perfectly stored until March, they simply do not have enough for longer, because the family eats everything.
