Ingredients

active wheat sourdough 100% moisture 300 grams
wheat flour / grade 550 gram
wheat flour 1 grade 200 grams
rice 40 grams
water 160 grams
fructose 2 tsp
instant yeast 2 grams
salt 19 grams

Cooking method

  • Feed the sourdough the day before 5-8 hours before kneading.
  • Rinse the rice, boil.
  • Smash with a blender.
  • Add water to the resulting suspension.
  • The total mass of the rice mash with water should weigh 400 grams
  • Mix flour with yeast.
  • Dissolve fructose in liquid.
  • Mix the liquid with the leaven.
  • Add flour and start kneading.
  • Add salt after 5 minutes.
  • The total mixing time is 12-15 minutes.
  • The dough is medium soft, does not stick.
  • Stretch, fold. Put on fermentation. Fermentation for 1 hour 45 minutes. Stretch-fold once after 45 minutes.

  • Divide the dough in half. Form two loaves.
  • Proofing in baskets, seam up, 60 minutes.
