Country cabbage soup with sorrel and apple

Ingredients

water 2 l
potatoes 200g
carrot 150g
bulb 1-2 pcs
tomatoes 150g
young cabbage 200g
rice 2 tbsp. l.
sorrel large bundle
Apple 2 pcs
sausage 50-70g
fresh herbs

Cooking method

  • A very simple and quick soup, which I usually cook at the end of July-August, when I already have my vegetables, a second wave of sorrel appears and there are already, albeit green and not ripe, apples. We put water on the fire, add rice and then all the vegetables, cut into approximately the same cubes. The approximate sequence of laying vegetables is potatoes, carrots, cabbage (I usually take one large top sheet from the head and cut out a hard vein, and leave the head of cabbage to pour further), onions, tomatoes, apples. The soup is bubbling all the time. We give everything to cook for 5 minutes, add the sausage cut into cubes (I have my own pork and chicken, smoked). We give it another 5 minutes to cook, salt, pepper, and add chopped sorrel (you can also add dill and parsley). Turn off the fire and let it brew under the lid for 15-20 minutes. Serve with boiled eggs and sour cream (I also have my own).

Note

I also cooked in the Shteba pressure cooker on the "Soup" program for 0.7 8 minutes (throw in everything except sorrel), after unlocking, add chopped sorrel (and fresh dill, parsley), mix, close the lid and let it brew for 15-20 minutes.
