Jelly on agar-agar with raspberries and coconut milk

Ingredients

coconut milk 2 cups
sugar 1 cup
agar-agar 4.5 tsp
water 1.5 cups
almond extract 0.5 tsp
raspberry ~ 0.5 cups

Cooking method

  • In a saucepan, combine the coconut milk, half the sugar and 2.5 teaspoons of agar agar.
  • Bring to a boil, reduce heat to medium, and heat, stirring continuously for 3 minutes.
  • Pour the mixture into a flat pan and refrigerate for a few minutes until it hardens.
  • Meanwhile, in a separate saucepan, combine the water, almond extract, remaining sugar, and remaining 2 teaspoons of agar.
  • Bring the mixture to a boil over high heat, remove from heat and let the mixture cool to room temperature.
  • Gently pour the mixture over the coconut layer, wait a little (the layer will begin to thicken very quickly) and spread the raspberries at some distance from each other.
  • Refrigerate for about 1 hour, and cut with a knife or using molds into portions with one berry in the center.
