Borscht-puree with apple and ginger

Ingredients

bulb 1 PC.
small carrot 1 PC.
stalked celery 2-3 pcs.
piece of ginger root 2-3 cm
olive oil 2 tbsp. l.
boiled beets 1 PC. (250 g)
Apple 1 PC.
vegetable broth (water) 2 tbsp.
dry red wine 50 ml
salt pepper taste

Cooking method

  • Heat olive oil in a large saucepan and add finely chopped onions, ginger, celery, carrots, a little salt and pepper. Cook for 8-10 minutes, stirring constantly. Then add the apple, cut into strips and red wine. Simmer all together until soft.
  • Add chopped beets, mix, dilute with a little broth and grind everything with a blender. Add the remaining broth to the resulting puree, bring to a boil. Season with salt and pepper.
  • The soup can be eaten hot or cold, served with sour cream and fresh herbs.

The dish is designed for

3-4 servings.

Note

Do not even doubt that this is borscht. Thick, aromatic, rich in taste, full-bodied. Nobody will notice the absence of potatoes, I guarantee. Well, for those who do not understand borscht without meat, you can always put a piece side by side on a plate.
