Ingredients

For the test:
Flour 1c 370 g
Potato starch 170 g
Egg C-0 2 pcs.
Salt 0.5 tsp
Ice water 165 gr.
For filling:
Peeled potatoes 0.8 kg.
Peeled carrots 1/2 small
Pork belly with meat strips (belly) 500 gr.
Bulb onions 2 large heads
Garlic 2-4 cloves
Greens, green onions, salt, spices to taste
Flour 1 grade 1 tbsp. l.

Cooking method

  • Each of us cooks this dish perfectly! I want to tell you about how I cook it. Maybe someone will like it. My husband is from Ukraine and knows a lot about dumplings. Therefore, I cook them often. And it's a sin to refuse - such devices now that it is a pleasure to sculpt!
  • I want to say right away that in the photos that you will see the filling of potatoes is soft. This is an exclusively childish version - for my "bad chewing". For this I simply do not drain all the potato broth.
  • So, first of all, I boil potatoes with carrots (prettier) in salted water with dried dill.

  • I drain, leaving a little broth and knead. I add a spoonful of flour to the hot mashed potatoes, mix.
  • For a thicker version of the filling, it is better to boil (bake) the potatoes in steam or in their uniform. And only then clean and knead.
  • I divide the pork brisket into two parts. I crumble one finely, and the other in strips.

  • Then I finely chop the onion.
  • I put finely chopped brisket in the multicooker bowl, cover with anti-sprinkler and fry in the Baking mode until golden brown. At the end I add the onion and fry it well.

  • I add greaves with onions to the potatoes along with the fat. It also makes the filling softer. But this way my caprices are easier to cope with. I put dill and parsley greens there. I stir it. Cool down without covering.

  • In the vacated multicooker bowl, fry the second part of the brisket in Baking, then add the onion and garlic. Season to taste with spices and salt.
  • Now let's take the dough.
  • I put the water in the refrigerator in advance. For she is not needed cold - ice.

  • Quickly knead flour, starch, eggs, salt and water in the bowl of the food processor using a hook attachment.
  • Why starch? I will say right away - the addition of starch does not give such a strong effect of creeping dumplings after cooking. They will certainly swell a little, but not so badly as to become porridge.

  • Collect the dough, take it out onto a floured table, cover with a plate tightly and a bowl on top so that it does not dry out. Leave on for at least 30 minutes. I made the dough earlier than the filling, so it lay for about an hour.
  • The dough is ready. Roll up a little. Here's what a bun. There is practically no need for flour for dusting.

  • Next, we enjoy making all the dumplings! Know to have time to put on prepared trays, well sprinkled with flour.   • Cook them not for long. But you need to cook in a delicious broth! You can in vegetable for this recipe! Dark mushroom is especially suitable. It will be delicious!
  • Or you can use meat, chicken ...
  • Or you can simply add herbs, salt, spices and butter to the water. After boiling, cook for a maximum of a minute, one and a half - the filling is ready. Then it's better to turn it off and let it stand for a while!
  • Serve sprinkled with fried cracklings and onions. And also with sour cream and freshly ground pepper (for adults, of course!).

My children perceive the swarovski as pampering. They can just peck. I usually fry them and put them in the refrigerator in a jar (only without garlic, it spoils faster with it). We add as desired everywhere. Sometimes just freshly cooked pasta.
And with starch, the dough absolutely changes the taste and behavior during cooking. Try it!
