Cold cream soup "Beets in oranges"

Cold cream soup Beetroot in oranges

Ingredients

Peeled boiled beets 200 gr.
Leek white part 25 gr.
Garlic 1 clove
Juicy orange about 150 gr. thing
Balsamic vinegar 1 tbsp. l.
Light vegetable broth 150-200 gr.
Brown sugar about 1 tsp.
Salt about 1/2 tsp.
Freshly ground black pepper taste
Cream 10% fat about 100 gr.
Homemade thick yogurt
Green onions
Odorless vegetable oil 2 tbsp. l.
A pinch of dried thyme

Cooking method

  • Chop the washed and dried green onions and mix with yoghurt and freeze in ice cube trays.
  • Crumble the beets into small cubes. Pour vegetable oil into a pan with a thick bottom and high sides. To warm. Arrange the beets, chopped garlic and leeks. Sprinkle with thyme and sauté until the onions are soft. Do not overcook!
  • Remove the zest from the orange and squeeze the juice. Add juice, zest, and balsamic vinegar to the pan. Cover and simmer over low heat for 15 minutes, stirring occasionally.
  • Cold cream soup Beetroot in oranges
  • Broth (hot) cooked right, pour into a frying pan. Mix. Let cool slightly and pour into a blender. Puree well, gradually adding cream. Add more cream or broth if necessary. Finish with sugar, salt and pepper. Refrigerate.
  • Serve with frozen yogurt sprinkled with green onions!
