Ingredients

fresh cucumbers 2 medium
dill small. bunch
celery and / or cilantro small. bunch
walnuts 1 tbsp. l. with a slide
kefir 200-250 ml
garlic 1 small. tooth.
salt 1/4 tsp
lemon juice (optional) 1 tbsp. l.
ice 3-5 cubes

Cooking method

  • This cold soup is very popular in Bulgaria. Despite the fact that it has a very low calorie content, the tarator is quite satisfying, and it takes a few minutes to prepare it! Great option for cooling soup on a hot summer day!
  • Cut the cucumbers into small cubes or strips. Fill with kefir, add herbs, chopped garlic and nuts, a pinch of salt. Mix everything and let the soup brew for 5 minutes to fully reveal the aroma of spices. If the soup is very thick, add a few pieces of ice or 2-3 tbsp before serving. l. very cold water.
