Spicy cold beetroot

Ingredients

Baked or boiled beets 4 medium
Celery stalk 2 pcs.
Young radish 150 g
Cucumbers 4 things. middle
Ice water 300-400 ml or to taste
Olive oil 5 tbsp. l.
Wine red vinegar 4-5 st. l.
Watercress and rucola handful
Sauce 2 drops
Worcestershire sauce 1 tsp optional
Salt (pink) taste

Cooking method

  • Very tasty, fast and light beetroot soup with unbeaten taste.
  • - Rinse the beets, wrap them in foil and bake at 180 C for 1.5 hours. Cool, clean. (Or steam it).
  • - Part of the vegetables, except for beets and celery, are left for decoration or filling in a puree soup for those who like to feel thick. Finely chop the remaining vegetables, put the watercress or rucola, fill with water and vinegar and let stand for five minutes. Then add salt, Tabasco and Worcester and beat with a blender until smooth. Cut into strips, if left, cucumbers and radishes and add them to the soup. Decorating and serving.
  • Delicious, healthy and fresh!
