Dinner Bread

Ingredients

active wheat leaven of 100% moisture based on lemon yeast 150 grams
water 200 grams
dispersed grain 100g
wheat flour 1 or in / grade 320 gram
semolina M 20 grams
fine rye flour 30 grams
dry yeast 1 gram
salt 9.5 grams

Cooking method

  • Leaven any 100% humidity. Feed before kneading for 5-6 hours.
  • Dispersed grain.
  • Wash the wheat well. Cover with cold water and leave to swell for 24-48 hours. Then take out the grains and grind in any way possible.
  • Dough.
  • Dinner Bread Mix all ingredients except salt. Kneading. Add salt after 5 minutes. Continue mixing. The total mixing time for me was 15 minutes. The dough is soft, slightly sticky.
  • We put the dough to fermentation, covered with foil in a warm place. I usually put it in the microwave with the light on. My temperature is 27-28 degrees.
  • Fermentation for 120 minutes. Stretch once in the middle of fermentation.

  • Roll out the dough into a small layer, roll it up with a roll, fixing each turn, pinch the seam.
  • We make a "sausage" from this roll.
  • We wrap it in a zigzag. Put the tail on top.

  • Proof on a sheet of paper, seam down, covered with foil for 70 minutes.

  • We bake in an oven heated to 240 degrees with steam for the first 10 minutes.
  • Remove steam, lower the temperature to 180 degrees. Bake until ready. I have a total baking time of 40 minutes.
  • We do not make cuts in the bread.
  • We get it. Let cool on a wire rack, cut and enjoy.
