Bird cherry raspberry muffin

Ingredients

Bird cherry flour 50 g
sour cream 20% (very thick) 200 g
granulated sugar 180 g
egg 2 pcs.
butter (softened) 80 g
premium flour 200 g
baking powder Dr. Oetker 1 tsp
salt pinch
frozen raspberries (optional)

Cooking method

  • Mix bird cherry flour with sour cream and let it brew for 30 minutes. Grind butter with sugar, add eggs one by one, beat until light foam. Add sour cream with bird cherry flour, salt, sifted wheat flour with baking powder to the egg mass. Stir until smooth. Put the dough in a pre-greased and floured dish. Distribute raspberries into cells:
  • Bird cherry raspberry muffin
  • Bake for 20-25 minutes at T = 180 degrees.

This is my first pastry with bird cherry flour and, now I know for sure, far from the last! Amazing aroma and taste! I recommend to all!!!

For taste and aroma (as you know, bird cherry baking has an Amaretto flavor), it is enough to put 3 tablespoons of bird cherry on top in a medium-sized cake. The rest is wheat flour. This is for savings.
The best combination of flavors is with sweet whipped cream and whipped sour cream with sugar. It tastes better to me with sour cream - its sourness gives the most harmonious combination with the taste of bird cherry.
My daughter gives her Moscow friends and acquaintances bird cherry cakes for all sorts of holidays and birthdays. Cream - sour cream. Curd cream will also be good.
