peeled rye flour 35 g
spring water 250 ml
salt 8 g

  • Pour 250 ml of spring water into a jar, add 9 mashed grapes, honey 16 g (or sugar). Stir, close tightly with a lid and heat (average 28 C).

  • After a day, fermentation will already be noticeable - the berries will float, the water will become cloudy. The lid must be opened periodically, allowing bacteria to breathe.
  • Depending on the temperature and even on the season (the process goes faster in spring), the yeast will be ready in 2-4 days. The result is a foaming carbonated liquid with a pungent yet very pleasant fermentation odor.

  • Keep refrigerated.
  • When the liquid is consumed, add water, honey, fresh grapes to the fermented remaining berries, and after a few hours in the warmth, you will have a new portion of yeast. And so on ad infinitum ... (of course, you should not accumulate old berries, but leave a little for the sourdough).

  • Pour 160 ml of liquid yeast into a bowl through a sieve (shake well before that). Add 35 grams of peeled rye flour and 165 grams of wheat. Quickly knead a lump of dough, cover with a lid with small holes so that the dough does not wind up, but does not suffocate. Leave for 12 hours at t 21 C. During this time, the dough will double:

  • I entrust the preparation of the wheat dough to my kneader. I pour 250 ml of spring water into the bowl, add dough and wheat flour 380 gr. I turn it on at medium speed. After 8 min. I add 8 grams of salt and at higher speeds I continue kneading for another 5 minutes.

  • I round the dough and, covering, put it in heat (about 25 C) to ferment for 2.5 hours, periodically (every 50 minutes) doing kneading. Workouts strengthen the muscles of the dough. To do this, I fold it into an "envelope". With wet hands.

  • After 15 minutes. Remove the lid, lower t to 200-180 C and bake for another 30 minutes.
  • Cool on the wire rack.

Ne_lipa, Thanks for the kind words! and the raisins ... I used them for dressing, and they must be not shiny (boiled in oil), but matte - not processed and this white bloom is alive on it. The raisins I had was black and, by the way, it does not stain the dough, unlike fresh black. grapes.

I kneaded the dough in a bread maker, it was liquid, but in the process of kneading it rounded out, stopped sticking to the walls. You will have to bake either in a bread maker or in a multicooker on the BREAD mode, in the absence of an oven. If I can't wait for recommendations, I will act at my own peril and risk
