Kysh Irus domlamasy (Dymlama)

Ingredients

Beef brisket or chicken necks, wings, backs 400 g
Green radish "margelanskaya" 200 g
Onion 100 g
Pumpkin 300 g
Carrot 200 g
Potatoes 300 g
Garlic 4 tooth
Cabbage leaves
Spice:
Dry dill, parsley, cumin, cilantro, bay leaf, (Sweet paprika flakes optional)

Cooking method

  • Today we are preparing a dish that is simple in both a practical and material sense. We will use local products that are currently being sold - in winter - on the average Crimean market, and we will try with minimal costs. This dish is inherently improvisation, and therefore the amount of food to be poured is arbitrary. What makes this dish "smoke" is the way it is laid, prepared and served. Although we know perfectly well that dimlama is a typical summer meal
  • We spread it in a cauldron / pan in layers - the chicken meat we have, radish, carrots, onions, pumpkin, potatoes cut into small cubes.
  • Cut the garlic into 4 pieces each clove. As we know, garlic loses its sharpness during heat treatment, so there are no restrictions on garlic.
  • Sprinkle with dried herbs and seasonings, salt and pepper. From optional seasonings, you can add - red bell pepper. Cover with cabbage leaves to make a "lid".
  • Unlike the classic dumlam - where juicy vegetables and, first of all, tomatoes are used, which we do not have in winter, we pour boiling water, at the rate of 1/3 of the volume of products used. We put on medium heat and when boiling, reduce to minimum. The radish takes the longest to cook. If the radish is ready, then everything else is too. This is 1-1.5 hours.
  • When ready, serve, as usual smoke is served - in layers from top to bottom. That is - a cabbage leaf, boiled vegetables and meat on it
  • So that is all! I got 70 rubles ($ 1.14).

Yes of course. This is a green radish. She's not that sharp. If you don't find it, which is unlikely, you can replace it with daikon, most likely.

Zachary, just a human thanks for such a delicious and simple recipe! I did it in a slow cooker twice and strictly according to the recipe. Yesterday I added raw beans and rubbed one tomato on top - it turned out very tasty. I did it with chicken ventricles + pork, and with beef. The second time, for speed, I rubbed everything on a coarse grater, except for potatoes. And she didn't cover the cabbage, she's not at hand. I will definitely do more! Thank you

I didn't have a pumpkin, and no one eats it at home. Made with chicken fillet. All vegetables are cut on a 10 Berner insert. Withstood an hour and a half. It seems that the sound was still hissing when the lid was opened, but in fact, the meat was burnt. I don't have a cauldron, but a frying pan shaped like a cauldron.
What I want to say. cubes of vegetables are not boiled, cooked well. The discovery for me was such a preparation of green radish - and it tasted like zucchini.
I will cook some more. It's just a little less time.
(green radish is almost always at home and I'm fed up with the salad)))
