I baked gingerbread cookies for the New Year. I baked them for the first time. I chose the recipe for its simplicity, and the promise that the gingerbread will be soft (as I like)
The recipe is wonderful! Simple, understandable, the main thing is delicious, aromatic gingerbread!
There were several questions ...
Knead several portions: the first according to the recipe, the second with the addition of rye flour. So, the ones according to the recipe turned out to be very smooth, even. And with rye flour with small micro cracks. Why is this so?
I noticed that those gingerbread cookies that I smeared with yolk ended up with some incomprehensible spots. It seems that they absorbed moisture from the yolk (applied with a brush in a thin layer). I did not smear the last batches in any way and everything turned out to be of an even beautiful color.

But my dough did not work out with plasticine. On the contrary, she did not want to become a lump. Did I add a lot of flour? The scales showed 250.
I read the advice: knead another dough and mix. So I will.

It tastes very tasty. Why liquid? When you roll it, it stuck to the table, as a result, the figures were deformed. They also increased a lot, which was not expected for me. This way I made the figures smaller.
