Ingredients

Fermented dough
premium wheat flour 100g
water 68 gram
dry yeast 1 gram
salt 2 grams
Dough 400 gram
premium wheat flour 500 grams
water 320-340 grams
dry yeast 5 grams

dry figs 420 grams
dried pears 210 grams
dried apples 95 grams
walnuts 90 grams
raisins 167 gram
cinnamon, cloves on the tip of a knife

lemon zest 3.5 grams
Syrup
sugar 150 grams

Cooking method

  • Fermented dough
  • Mix all ingredients. Leave at room temperature for 1-2 hours. Transfer to refrigerator for 24-48 hours.

  • Mix yeast with flour. Combine all ingredients except salt and additives. Knead the dough. Add salt after 5 minutes. Kneading for 15-20 minutes. The dough is very soft and liquid. Stretch-fold a couple of times on a table lightly dusted with flour. Fold in a container and leave to ferment for 1 hour.

  • After an hour, separate 400 grams from the total mass of the dough. The rest is put on to wander. With this slice, you will bake a simple white bread for dinner. Put the dough back into the food processor bowl. First, stir in the zest, lemon juice and spices. Then add dried fruits. I added in parts. I had to help with my hands, putting the dough on the table. It turns out an incredible mountain of dried fruits, it seems. that they won't fit into such a small piece of dough. But everything worked out. The dough was divided into 2 parts. I rolled it into balls and left for 10 minutes. Then she blinded the figures, covered and left for another 20 minutes. Preheat the oven to 190 degrees. Baked for the first 20 minutes with steam. Then she lowered the temperature to 175 degrees, covered the bread with foil. baked for another 45 minutes.
  • While the bread is baking, we cook the syrup. Mix sugar with water. Boil and let it boil for a couple of minutes. We take out the bread. Lubricate with syrup several times while still warm. Let it cool, cut it and enjoy!

I've been going around the recipe for this bread for over a year. I didn't have pears, and then I piled them in the summer, then I was afraid to approach. His hour has come! Pear- has antitussive and disinfectant, antipyretic and diuretic, as well as a fixing effect.
Apples- the fruit of health. They contain a large amount of vitamins such as C, B1, B2, P, E, including manganese and potassium. It is also one of the easily absorbed sources of iron. Apples are used not only for the prevention of colds, but also for the treatment of severe ailments such as malignant formations. Adequate potassium helps to stabilize blood pressure, while calcium is essential for strengthening tooth enamel and bone tissue.
Walnut- is enriched with a complex of biologically active components that have a beneficial effect on the vessels of our brain. Walnut fruits will help to significantly reduce nervous tension. Walnuts are useful for people involved in physical activity. Walnut perfectly strengthens the heart, brain, liver, especially when used together with figs and raisins... The benefits of walnuts for people with thyroid diseases are indisputable, since the kernels are rich in iodine.
The recipe was taken by me in LJ from Sergey. The only thing I changed was to reduce the amount of cinnamon.He has 20 grams of it in his recipe, which seemed too much to me.
