Dried turkey fillet in Oursson dehydrator

Ingredients

Turkey fillet 800-1000g
Saline solution
Water 250ml
Salt 2 tbsp. l.
Sugar 0.5 tbsp. l.
Lemon juice 0.5-1h l.
Paste
Soy sauce (only thicker) 1 tsp
Adjika 2 tbsp. l.
Grain mustard 1 tbsp. l.
Herbs (oregano, sumac) what you like. 1 tsp

Cooking method

  • My file lay in a saline solution under the yoke for a day.
  • Then I make a paste, smear all the meat so thickly (the paste is not dry) and keep it for 2-3 days. Then I shake off the excess a little and into the dryer.
  • I wanted to get a fairly dry product and therefore decided to dry for a long time and at lower temperatures.
  • it turned out 48-49 hours at 40 degrees.

It is better to use it immediately, in a few days.
