Ingredients

Dough:
Dry yeast) 3/4 tsp from HP
Warm water) 125 ml
Sugar 0.5 tbsp. l. from HP
Milk (warm) 250 ml
Salt 1/3 tsp from HP
Flour 155 gr.
Baking powder 1 tsp from HP
Filling:
Champignons / dry mushrooms 300 g. / 60 g.
Bulb onion (large) 1 PC.
Vegetable oil 3 tbsp. l.
Hard cheese 100 g
Salt taste

Cooking method

  • Qatayef (قطايف) is a kind of sweet spring rolls. This is one of the most popular desserts in the Middle East. Cooking Arabian pancakes is different from our usual recipes. Yeast dough for them is made without eggs, oil, salt, and ripens in only half an hour. In addition to yeast, a baking powder is added to the dough, which makes it possible to obtain lush and aromatic pancakes with a bubble structure. Pancakes are baked on only one side in a completely dry frying pan without oil. Each pancake is no larger than a coffee saucer. When the pancakes have cooled down, they are filled with sweet filling (custard, sweet curd mass, caramelized apples, nuts with sugar and dried fruits) and glued together in the form of a bag or dumpling.
  • Our family loves unsweetened filling in pancakes, so I bake these pancakes with filling traditional for Russian cuisine - meat, chicken, liverwurst, mushrooms, cabbage, green onions and eggs. Most of all I like these pancakes with mushrooms and cabbage. I add some cheese to this filling, which makes the pancakes taste even better. Since the unsweetened filling implies an almost unsweetened dough, I reduced the amount of sugar in the original recipe and added salt.
  • This dish is very simple, quick and not troublesome. The taste is wonderful! Pancakes are suitable for both family and festive feasts.
  • So, we make pancake dough. First you need to "revive" dry active yeast*by adding them along with sugar to warm water. Let's leave them for 10 minutes.

  • While the yeast is activated, let's get to the filling. I have dried forest mushrooms, so I soaked and boiled them the night before. If you use champignons, then you just need to peel and cut them. Fry mushrooms and onions in vegetable oil, adding salt to taste.

  • I have fried cabbage left from dinner. I decided to use it in pancakes and add one boiled egg.

  • We continue to prepare the dough.
  • 10 minutes passed. The yeast is foaming. Add warm milk to the yeast mixture, add the sifted flour with baking powder and salt. Mix with a whisk until smooth. Leave the dough for 20 minutes. Do not mix the finished dough so as not to release bubbles formed by the baking powder from it.

  • We bake pancakes in a dry frying pan with a non-stick coating on one side only. Preheat the pan well, then reduce the heat slightly. Pour 2 - 2.5 tablespoons of dough into the center. Pour the dough at one point, then it spreads evenly. In a large frying pan, you can bake 2 - 3 pancakes at once - it will go faster.
  • Bake the pancake until golden brown. The pancake should bubble. A sign that the pancake is ready is a completely dried (no wet spots) top layer. It is important not to dry it out.

  • One pancake is baked for about a minute. In this way, we bake pancakes from all the dough, but do not stack them on top of each other so that they do not stick together (I put the prepared pancakes on a kitchen linen towel). The diameter of the pancake is about 10 cm.
  • Now we start wrapping the filling in a pancake. Put 1 tbsp in the center of the pancake. l. mushroom filling and 1 tsp. grated cheese.

  • We pinch the edges of the pancake from one side to almost the middle. The edges of the pancake are damp and stick together well.

  • Put the finished pancakes in any baking dish. Put in an oven preheated to 200 degrees C for 10 minutes**.

* Since I use fast-acting yeast in baking, I skipped the stage of "revitalizing" the yeast, immediately mixing all the ingredients for the dough: sifted flour with yeast and baking powder, salt, sugar, added warm milk, water and mixed with a whisk until the lumps disappeared. This dough was also cooked for 30 minutes, like the dough with dry active yeast.
** Pancakes can be made in advance, filled with filling, refrigerated, and baked in the oven 10 minutes before serving.

Although with other delicious fillings it turns out tasty too.

But in this recipe, the yeast content is not critical. In the original, take 1 tsp. Then I read somewhere else that 0.5 tsp. make the dough and everything works out. I chose the arithmetic mean, and I always do this. Soda, which in the baking powder will kill the yeast flavor. I read this from Luda in LJ when she still had it. But yeast baked goods on soda (baking powder) turn out to be very lush and aromatic. I am always surprised at these pancakes. It seems like there is no muffin in the recipe, but they are kind of rich in taste.
