Ingredients

Rhubarb
(peeled and cut into pieces)

One orange juice
Jelly sugar
(regular sugar can be used)
1 kg

Cooking method

  • As an option, supplement in the form of 100 gr. pistachios (I don’t like any nuts, so I ignored this option)
  • Wash the rhubarb, cut into small pieces. Stir in orange juice and sugar, and leave for 3-4 hours. Then I cooked in cotton, on the "Jam" program. But you can also on the stove. I did the same with lemon juice, to be honest, I liked orange juice better. You can choose to add: freshly grated orange zest, cinnamon, vanilla. I opted for vanilla (half a pod, I just didn't have it anymore). I almost forgot ... I took the usual sugar + a packet of "Zhelfix 1 + 1". In terms of density, it turned out what you need!

As I understand it, this is sugar with the addition of fruit pectin, which is used to thicken jams, confitures, etc. I did not find it on sale, so I replaced it with regular sugar + "Zhelfix".

All the same, rhubarb jam is something! I digested almost all the rhubarb from the neighboring garden (a special thanks to her), anyway she never collected it, it seemed to grow from her, but here it is a double benefit ... and got rid of rhubarb, and in addition got a jar of delicious jam (from me in gratitude ). I have already tried many options (even with a banana), today I cook with strawberries ... I highly recommend it to everyone who has not tried it yet !!!

Sorry for not quite on the topic ... please tell me the shelf life of jam, jam, etc. cooked with "Zhelfix", and can such preparations be stored at room temperature? Or is it still better in the refrigerator?

I won't say about lemon, but orange juice and zest definitely give color and aroma. Last year, my mother just made rhubarb jam on the stove. Tasty, but not attractive in color. And this year I was honored to make rhubarb and orange jam in HP. Liked in all respects.

Rhubarb, of course, is sour, but the sugar is terribly sweet! Of course, it also affects the taste, and the citrus juice is also rich in pectin, which contributes to better gelling, which is especially important when cooking jam with ordinary sugar.
