Ingredients

For vegetable broth:
Water 1L
Bulb onions 1 PC.
Carrot 1 PC.
Celery root 50 g
Bay leaf 1 PC.

For risotto:
Rice for risotto (I have Viola) 200 g
Olive oil 3st. l.
Shallots (I have onions) 2 pcs.
Celery stalk 2 pcs.
Dry white wine 1 st.
Ground coriander 1h l.
Oyster mushrooms 150 g *
Forest mushrooms (I have frozen) 200 g *
Mascarpone ** 2st. l.
Cheese*** 50 g

Cooking method

  • For the broth, peel the vegetables, add water, bring to a boil and boil for 10 minutes. Keep warm over low heat.
  • Heat 3 tablespoons in a frying pan. l. oils. Lay out the chopped mushrooms. Cook until tender.
  • * The author uses 100 g of oyster mushrooms and 100 g of forest mushrooms. It seemed to me this was not enough. I took 150 oyster mushrooms and a package (500 g) of frozen forest mushrooms. After defrosting, it drained and squeezed out excess liquid. It turned out 200 g.
  • In a deep saucepan (I have a cast iron wok), heat 1 tbsp. l. olive oil, add chopped onion, cook for 3 minutes until soft, without frying.
  • Add finely chopped celery and cook for another 2 minutes.
  • Add rice to vegetables, stir and simmer all together for 2 minutes.
  • Pour in wine and cook until evaporated.
  • Then pour in a ladle of hot broth, add coriander and cook, stirring occasionally, until the liquid has completely evaporated. Then pour in the next ladle of broth.
  • In this way, bring the rice to the al dente state (when it has already been cooked, but remained a little hard inside). The risotto should be very moist and creamy. Season to taste.
  • Stir the mushrooms into the risotto.
  • Add mascarpone, stir.
  • ** I have curd cheese by THIS recipe.
  • Sprinkle with grated cheese before serving.
  • *** In the original recipe, Parmesan, I have Russian.
  • Decorate with herbs.
  • I continue to wonder and admire the tastes of Ramzi!) An absolutely simple recipe, but it turned out so delicious. Even the child ate, but, firstly, he practically eats nothing at all, and, secondly, he is very wary of new tastes and seemingly incomprehensible dishes. His verdict is very tasty!) And I really liked the combination of oyster mushrooms and forest mushrooms. It turns out a very mushroom aroma and taste.
