I cleaned three pork cheeks to a thickness of a layer of bacon on the skin of about 1 cm. I cut three rectangles out of them with a knife, trying to line the entire side surface of the device from the inside (it turned out not quite, there were gaps and there was not enough height for a couple of cm). The resulting cylinder-roll was filled with the usual "charge" - pieces a few cm in size from:
pork shoulder
bell pepper
remaining from the cut of meat-lard from the same cheeks.
The spices are the same as usual
gelatin from the package "for making jellied meat".

The package with the tab was not pierced anywhere.
Cooked for 1.5 hours in his special saucepan. For the last half hour, I pierced the bag with a thin awl in the upper slots. The total shrinkage of the bottom during cooking is about 15 mm. The navar of the external broth is rather weak in comparison with the previous brews. It tastes like a broth from homemade dumplings.
During cooling, the bottom settled still - the process stopped at about half the height of the slots. In the morning I put it in the refrigerator yesterday, removing the springs. In the evening, when I came home from work, I took it out completely.

Outcome

The yield is 1250 g (!) With a total laying of 1550.
The most juicy meat of all my uses of this unit.
The skin is soft, easily cut with a knife and chewed with teeth
The sintering of the pieces is rather weak in comparison with the previous ones - with a cut pancake thickness of 3 mm, they still want to crumble, 5 mm are already held confidently.
Conclusions.
Despite some additional cannibalism, it seems that it makes sense to continue working with this technology. In the future, bring it to mind ...

after many experiments, I settled on one recipe. Vechina from a whole chicken carcass (or from a turkey thigh fillet, it is big, just like from a chicken carcass). We take the chicken, take out all the bones from it (here my husband is a specialist, he does it quickly and efficiently, she saw that he was starting to take the bones out of the ass, the wings were also cut off).Then I salt the chicken, sprinkle it with spices and add Nasharab, put it in the refrigerator for several hours. Then I fold the carcass so that there is skin on the outside and into the ham in a baking bag. I do it in the oven for 50 minutes-1 hour, depending on the size of the chicken. It turns out very tasty.

The technology is the same from the thigh fillet, only it's easier - you don't need to take anything out, pickle it right away, then wait, then gently roll it up, but it's better to add gelatin so that it hardens later so that it is convenient to cut. The chicken freezes itself perfectly, no gelatin is needed there.
