Ingredients

DOUGH:
Flour 300 g
Cocoa 2 tbsp. l.
Sugar 150 g
Baking powder 1 tsp on horseback
Small instant oat flakes 150 g
Butter (margarine) 150 g
SYRUP: Water into syrup 50 ml
Sugar into syrup 2 tbsp. l.
Honey in syrup 1 tbsp. l.
Yolks 2 pcs.
FILLING:
Oat flakes large 50 g
Butter 30 g
Almond 50 g
Protein 2 pcs.
Sugar 100 g
Vanilla sugar 1 pack
Chocolate glaze : 50 g schoolboy + 2-3 st. l. milk

Cooking method

  • Thaler is the name of a large silver coin, which in the 16th-19th centuries played an important role in monetary circulation in Europe, including on the territory of modern Germany, and in international trade. You can read interesting material about the history of thaler here: 🔗
  • In cooking, thalers are called a type of cookie that has a round shape and a fairly large size. In the recipe, it is advisable to use two types of oatmeal: for the filling - large, for the dough, small, instant.
  • Preparation

  • - Cook the syrup to be used in the dough. To do this, take 2 tbsp. l. sugar with a slide and pour 50 ml. water. Put on the stove (in the microwave) and, stirring, cook until the sugar dissolves. (I added 1 tablespoon honey to the chilled syrup, as in one of the German recipes) Refrigerate.

  • - Mix all dry ingredients for the dough: flour, small oatmeal, sugar, baking powder, cocoa.

  • - Separate the yolks from the whites.
  • Mix yolks with syrup and a pinch of salt. Finely chop the butter and add to the dry mixture, gradually pouring in the syrup, knead the dough. It should lag behind your hands, although it feels rather sticky.

  • Cooking the filling
  • - To do this, put butter and large oatmeal in a hot frying pan. Fry the cereal until golden brown until crispy.

  • - Grind the nuts in a blender, but not (!) To the state of flour. Soak raisins and dried cherries for 5-10 minutes in strongly brewed tea or cognac.
  • - Beat the whites into a foam. Then, adding sugar in a teaspoon, beat until strong peaks. Add vanilla sugar. Add toasted cereals, nuts, raisins to the ready-made whipped proteins and mix everything.

  • I put some of the sugar intended for whipping proteins into the filling - I wanted it to crunch in the finished cookie.
  • We form cookies
  • - Cut off half of the dough. Sprinkle the table with flour, roll it out to a thickness of about 1-2 mm, cut out circles with a diameter of 7-8 cm. Put all the circles on a baking sheet covered with baking paper.
  • - Place the filling in the middle with a tablespoon on each circle.
  • - Roll out a layer 1-2 mm thick from the remaining dough, cut out circles and cover all the talers with them. Walk a little with your finger along the perimeter of each thaler, slightly press down the dough along the perimeter and flatten on top.

  • -Send to bake for 20-25 minutes at 180 degrees. Remove from oven and allow to cool.
  • - Sprinkle thalers with powdered sugar or cocoa powder.
  • Then melt the chocolate in 2 tbsp. l. milk and decorate each thaler.

  • On the second day, the cookies lay in an airtight box and became even tastier!
