Swabian tripe salad (Kuttelsalat)

Ingredients

boiled tripe (replaced with beef belly) 500 g
white vinegar / wine taste
salt, pepper, fresh garlic taste
raw carrots 2 pcs
unrefined olive / sunflower. oil taste
juice of half a lemon
bulb onions 1-2 pcs
celery (not added) 100 g
grass

Cooking method

  • Boil the tripe for about 3 hours until tender. You can boil in water with the addition of vinegar, or you can add vinegar to an already boiled tripe when dressing a salad. Grate the carrots, chop the celery and onions. Cut the tripe into thin strips about 5mm thick and season with vinegar. Add vegetables. Season with lemon juice and oil, salt and pepper. The dressing can be made sour cream, mayonnaise or according to your taste. The salad needs to be infused for about an hour in the refrigerator.

15 minutes

Note

Cook the tripe in a pressure cooker for 1 hour at maximum pressure.
