Choux roll with filling

Ingredients

For a roll:
milk 300 g
margarine 150 g
flour 200 g
eggs 4 large or 5 small
salt 1/2 teaspoon
For filling
buckwheat porridge viscous I cooked from about 2 multi-glasses 200 gr each
chicken liver 300 g
champignons or any other mushrooms 300 g
mayonnaise how much will it take
bulb onions 2 heads
carrot 1 large piece
salt and spices to taste

Cooking method

  • We heat milk with margarine and salt in a saucepan with a handle (like a ladle). But immediately we take a saucepan that is not small, since our dough will be brewed in it. When the margarine is completely dissolved in one fell swoop, pour out all the flour at once and knead with a wooden spatula without interruption. When the flour has completely merged with the dough and the lumps have disappeared, and this happens quickly enough, we still stir with a spatula, I can even say we grind. But we don't remove it from the fire, we just reduce it. It is necessary to "burn" or fry the dough a little. I do this until a white coating appears on the pan. Then remove from heat and stir a little more and let cool for about 5 minutes. Then there is a choice. Continue to do it using a combine (hook attachment) or manually using the same spatula.
  • A little digression. I really love choux pastry. I cook a lot of dishes with it, including dumplings. I noticed that it is better to knead it with a wooden spatula. And yet, if it is used for baking or for dishes that are soaked, then it is better to do it without using a combine. The dough is much softer, but this is my IMHO. Well, back to the ladle. Now you need to stir in all the eggs one by one. Moreover, the next comes only when the previous one is completely intervened.
  • Finally, the dough is ready. Next, lay the baking paper on a large spread and coat well with vegetable or butter. It’s good, because you need to move away from her later. Now, using a spoon or a knife, spread the dough on the tar, trying to do it evenly. For this, I put ice water next to it and constantly wet a knife or spoon. Then we send it to the oven for 180 for about 25-30 minutes. And we ourselves are engaged in the filling. I do this after the test, but if it's the first time, it's better to start with the filling.
  • In a frying pan, fry the onions and carrots in a mixture of vegetable and butter oils. Then add the finely chopped liver there. Fry and cover with a lid and slightly quench. After getting into the roll, the filling is no longer subject to heat treatment, therefore we bring it to 100% readiness. Now you can add buckwheat porridge and mushrooms there. Fry and simmer a little. We bring to taste with spices and salt. Add mayonnaise to achieve the viscosity of the filling (just not liquid), so as not to crumble. My mom does it with beaten egg whites, but I prefer mayonnaise.
  • We get the finished roll cake and IMMEDIATELY !!!! we roll it with a roll directly in the paper, so that later it does not break. Let stand for a few minutes. Then we roll it out, remove it from the paper, apply the filling evenly throughout the cake, roll it back up with a roll.
  • The roll is ready. The taste is very delicate. It's also a good idea to coat the top of the roll with mayonnaise or your favorite sauce. It's just that mine is meant for transportation, so it's not needed to be soiled.

Tanyshka herself made with liver pate, mushrooms and cheese. This is also very tasty. But since mine do not really like buckwheat, but they need to eat it, so I use it in the fillings of rolls and pies. Here already goes with a bang.
It goes well as a popular snack, but well and warmed up. With sweet (I love herbal) tea or coffee !!!!
