Ingredients

Eggplant by the number of guests
Meat (lamb, veal, pork) 150 g for about one eggplant

Cooking method

Eggplant, in turn, is saturated with meat juice, and its pulp becomes incredibly tasty.
  • Of course, such a dish will sound absolutely special if it is cooked over a fire. But at home it turns out excellently!
  • I cooked one large eggplant in a Phillips air fryer for two. Next time I will do it under the grill in the oven on the wire rack. The main task is to arrange the skewers so that they can be rotated. And so that you can rotate the meat inside the eggplant.
  • Preparation
  • - We take the eggplant and make an incision lengthwise, without cutting through to the end. Gently widen the slot a little and salt the eggplant inside abundantly. Let it stand for 10-20 minutes and squeeze the juice without damaging the eggplant. (I have imported, "winter eggplant" - there was no juice) Pepper inside.

  • Barbecue prepared in advance - cut the meat into small pieces and marinate to taste, preferably in advance.
  • String on a skewer or a skewer moistened with water. Sprinkle the eggplant inside and outside with vegetable oil, sprinkle the kebab itself and carefully place it inside the eggplant, fixing the ends of the skewer on both sides. They must be visible from the ends of the eggplant in order to be able to rotate the skewered kebab during cooking, since the meat must be fried from all sides.

  • Fry on charcoal, periodically turning the eggplant, trying to fry the eggplant from all sides. In the process of frying, after the visible part of the meat has browned, once or twice, holding the eggplant, turn the meat inside the eggplant.
  • Remove from the fire when the eggplants have become soft inside. Serve with herbs, flat cakes and sauces. Can be fried in portions on small skewers and served directly on the skewers. Sprinkle with pomegranate seeds. I didn't have a pomegranate, and I poured balsamic cream.

  • I cooked in an air fryer. She put a grate down on the basket, put skewers with meat and eggplant on skewers on it. fried at 160 gr. 15 minutes, turned to the other side the eggplant itself and the meat inside the eggplant and fried at 180 gr. eggplant until soft, and meat until golden brown.
