If you see air, then pierce these places with a needle. We hang the finished loaves for a couple of hours to shrink. We insert a thermometer-probe into one of them. Then put it in a cold oven. We cook for an hour (this together with heating to the desired oven temperature) at a temperature of 60 degrees. Then we increase the temperature to 80 degrees and cook to a temperature in the loaf of 68-70 degrees. Approximately 3 hours. We take it out, cool it quickly under a cold shower or in a bowl with cold water. Wipe clean and put in the refrigerator for 10-12 hours. We cut and enjoy delicious handmade sausage.

When I make sausage in the oven, the temperature inside the loaf reaches 68-70g. after about 3 hours. I follow the temperature with a thermometer for the oven, and a thermometer for cooking meat. It bothered me: how could it be that it should be 4, or even 5 hours as in the recipes they write, but I have 3 hours and the thermometer shows over 70g. I take out the sausage, cool it, let it rest in the cold-ke 10-12 hours. I try: the sausage turned out to be "5". I first sinned with a meat thermometer, but then I stopped paying attention to it and continued to cook as I did, and did not buy a thermometer from another company.
