  • Having bought the GORENJE BM1400E bread maker, I was tormented with the recipes that came with the kit. The bread turned out to be edible, but the roof fell off all the time, no matter what recipe you took. Found your forum. I began to experiment. And this is the recipe. The bread is VERY airy, soft and delicious! The husband ordered to bake only him. You can bake in double form. This recipe is just for a small form. Or just multiply everything by 2 and make it big.
  • I use natural kvass wort,
  • Gorenje BM1400E. Wheat-rye bread on kvass wort,
  • which includes rye malt, barley malt, rye flour and water. I weigh the ingredients on a scale. First, I weigh the wort in a saucepan, then add water to it by weight and stir. I pour it into the mold, add oil. Then, as in the instructions for the bread maker: flour, yeast into the hole, in the corners: agram, panifarin and salt. Panifarin can be replaced with 2 teaspoons of semolina from durum wheat, agram - 1 teaspoon of natural vinegar without perfume (otherwise the bread will smell like "cologne").
  • In the second form, you can put it like the same bread, but with herbs and spices to taste (cumin, cilantro and whatever your heart desires) or white bread.

Do not think of it as criticism, but it seems that there is too much liquid on the bread lid. Have you tried to reduce it by 20-30 ml? And yeast 2.5-3 grams can be tasted. I put 1 teaspoon on 400 grams of flour.

Yeast, maybe a little less. Need to try. And the ratio of flour and liquid is correct for this model of bread maker. I selected it experimentally. The lid on the rye is not sagging, maybe the picture turned out badly.

Depends on the type of flour. When I change the type of flour (white or rye), I also have to slightly adjust the proportion.

This bread turned out to be a real discovery for me. It seemed that a lot of ingredients were needed for a good wheat-rye taste. But this is not even sugar! Added, as you advised, semolina and apple cider vinegar. Does kvass wort give sweetness to bread? There is no sugar in the composition. And I also liked his nostrils)))

Kvass wort contains both malt and sugar. Only for different types of flour and different bread machines you need to try the amount of water - sometimes you need a little less. If there is too much water, the roof will fall; if there is not enough water, it will work worse. Try it.
