Ingredients

cucumbers or zucchini 1 kg
sugar 300g
lemon acid 1 tsp
fresh mint 50g
cardamom, star anise, ground anise (for zucchini) 1 tsp.
powdered sugar for dusting

Cooking method

  • I give the recipe for 1 kg of cucumbers or zucchini, but I advise you to do a lot at once - from 4-6 kg. It tastes so good! Candied fruits are obtained as a store papaya, only with a refreshing sour-mint and aniseed aroma.
  • We peel the skin from both cucumbers and zucchini. I did not cut off the cucumbers and then I felt it. We remove seeds from middle-aged zucchini. Cut into cubes about 1x1 cm.

  • We blanch, that is, pour into boiling water with 1 tsp. soda and leave in it for 3 minutes, put it in a colander and pour over with cold water. This will help them keep their shape. Sprinkle the cubes with sugar with 0.5 tsp. citric acid, mix and leave to give juice for 1.5-2 hours. You can immediately add ground spices to the zucchini. So much juice is released that there is a "soup" feeling.

  • Bring to a boil with frequent stirring and cook over low heat for 10 minutes. Remove from heat, put in 25 g of fresh mint, preferably with twigs, or with flowers, so it will be more convenient to remove it later. Close the lid and leave to cool and soak in the syrup for 8-10 hours.

  • Add another 0.5 tsp. citric acid, another 25 g of fresh mint, again bring to a boil and cook for 5 minutes. Leave in syrup for an hour and put in a colander. Take out the mint and discard it.   • We spread the cubes on oiled paper in a dryer and dry at 60-65 * C candied cucumber 6-7 hours, zucchini 8 hours. I have a Rommelsbacher DA 750 dryer with solid pallets, so I just put it directly on the pallets without greasing and without paper. In the middle of time, she turned the candied fruit over with a spoon and that's it.

Well, that's the end of the second series, the final! I must say right away that the spices were put strictly according to the recipe, this time I didn't scoff! Dryer Veterok, temperature 70, that is, maximum, the first 2 hours, then 60. For 8 hours they did not wilted to the desired condition. I think that along with a decrease in the drying temperature, it was necessary to shake the candied fruits off the paper so that the air circulated more correctly. They were already a little "stuck" and would not stick to the grate. I removed the paper only after 6 hours ... Since there was not enough time, I postponed the final drying in the morning. Another 2 hours - everything was ready. I cooled it down, rolled it in powder and tried to remove it ... But then my husband came to drink coffee, took a spoon and ... In short, very tasty. And sweet in moderation, and sourness, and unobtrusive taste of spices - beauty!

Yes, since I really love vanilla, next time I will add a little to the specified spices.
