Ingredients

Dry or fresh yeast 10 g
Whole grain flour 300 g
Rye flour 150 g
Honey or molasses 2 tbsp. l.
Olive oil 2 tbsp. l.
Water 300 ml
Salt 1 tsp
Walnuts 75 g
Sunflower seeds, flax seeds, or pumpkin seeds 75 g

Cooking method

  • Fill everyone!
  • Our family, on the advice of a nutritionist, now eats only whole grain bread! We love this bread, I often bake it.
  • Finely grind the nuts.
  • Put flour into the mixer bowl, rub the yeast and flour (if fresh) with your fingers, add salt, olive oil, honey, water and knead the dough. Add nuts and seeds, knead again.

  • I'm lazy and throw everything at once!
  • Let stand for 1-1.5 hours.

  • Then put the bun into a bread maker and put on the "Rye bread" mode.

About yeast: 10 grams of fresh, this is my German yeast. I have heard somewhere that they are more concentrated than in Russia or Ukraine. I only use fresh ones. And I never dilute yeast in water, I just rub it into crumbs with my fingers and flour.

No, I'm not adding here. Only in Borodinsky. It is possible that this color is given by dark molasses. And my flour is also not white. I hardly ever use white flour.
