First, it takes a very long time to pluck the leaves. I am 540 gr. twigs with leaves processed 4 hours in total - for 4 calls.
It froze for three days - they did not want to freeze in any way.
I pulled it out of the freezer and tried to get the juice out. And I rode over them with a rolling pin, and just crumpled in my hands, and tried to twist them in small handfuls. Nothing happened to her! So whole and unharmed went to fermentation. Darkened, though a little.
Fermented for 7 hours.
After fermentation, the leaf was very dry, although I put pressure on and even sprinkled a little water.
I dried it for 20 minutes at 100 *, and then dried it in e-mail. dryer for 30 *, as she was afraid to dry out. The tea dried very quickly - in about 40 minutes.In general, whole leaves turned out.
Dried tea weighs 140 grams. And it takes up a volume of 2.5 liters!
There was no strong aroma. Faint pleasant aroma. The taste is sour, pleasant. But there is no astringency that I expected. I put it away for storage, I'll wait until the fall. There it will become clear whether the tea is good or not. While there is no desire to repeat this tea! Not because of the taste ... Because of the laboriousness.

There was still fermented tea left, I wanted to dry it with a second run, but circumstances did not allow. I put it in a salad bowl (1L), covered it with cling film and put it in the refrigerator, it chills me very much! I think I will always have time to throw it out. Today there was an opportunity to do it (instead of Thursday!). Delight is complete! The aroma is bright with hints of cognac. So the wild yeast in the refrigerator continued to work, albeit slowly.
