Baked potato salad with shrimps

Ingredients

Young potatoes, large 2 pcs.
Large shrimps (boiled and peeled) 200 gr.
Boiled chicken egg 2 pcs.
Celery stalks 2 pcs.
For refueling:
The egg is fresh 1 PC. + 1 yolk
Green onions small bundle
Cilantro (I have parsley) small bundle
White wine vinegar 1 tbsp. l.
Dijon mustard 2 tsp
Olive oil + vegetable oil 2 tbsp. l. + 100 ml
Salt, black pepper taste

Cooking method

  • Wash the potatoes thoroughly with a brush. Dry. 1 tbsp. l. Combine olive oil with sea salt to taste and grate potatoes with this mixture. Separately, wrap each potato in foil and place in the Philips AF bowl and bake at 170 * C for 20-25 minutes. Cool down.

  • Cut the celery across into thin slices. Hard-boiled eggs, cut into cubes. Cut the cooled baked potatoes into large slices.

  • For refueling: Place 1 fresh egg and 1 yolk in a blender bowl (it is better to use a stationary glass). Add finely chopped onion and cilantro (I have parsley). Beat until smooth. Add wine vinegar and Dijon mustard and beat again.
  • Then, without turning off the blender motor, pour in a mixture of olive and vegetable oils in a thin stream (if a glass is used, I added oil in small portions). Season the dressing with salt and pepper to taste.

  • Combine chopped celery, egg, potatoes and shrimp. Add the dressing (not all of it is needed), mix and let the salad sit for 20 minutes.

  • When serving, sprinkle with cilantro leaves (I have parsley). The result is a delicious and satisfying salad.

Natalia, the sauce is not quite mayonnaise. More precisely, it is not mayonnaise at all. That is, the ingredients are not emulsified, but only mixed into a homogeneous, more or less smooth mass.
