Ingredients

pork neck 1 kg
water 0.5 l
salt 16 gr.
black peppercorns + allspice 5 pcs.
sugar 1 tsp
cognac 1 tbsp. l.
sumac 2 tsp
lavrushka (break) 3 sheet.
ground nutmeg 1/4 tsp

Cooking method

  • Boil water with spices and chill. Wash the neck and cut into flat pieces, as for chops). Beat off the meat, put in a bowl and pour over with brine, add cognac. Cover and refrigerate for 24 hours. After a day, take out the meat and twist it into tight rolls, place it in a shredder standing up to the top. Place the lavrushka on the walls of the shredder. Pour in a little brine and tighten the lid. Put in the refrigerator for another day. The meat ripens well in 48 hours.
  • Further according to the instructions for cooking in a shredder.
  • I put in a pot of cold water on a gas stove with a small comfort on the flame divider. The temperature was 75 * C for four hours. Then at 75 * C I cooked for 2.5 hours.
  • You can turn on the temperature faster and then cook at 75 * C for 3 hours. But I read that the meat should warm up slowly. It is fermented this way.
  • Then cool and refrigerate for 6-12 hours.
  • It turned out very tasty meat in jelly. Cut into thin slices.
