Bananas 4-5 pcs.
Boiled condensed milk 1 can
Cream 35% (for whipping) 500 ml
Sugar 1 dec. the spoon
Instant coffee 1 tsp from the hills.
Ground coffee (for sprinkling) 1 tsp
Gelatin grows rapidly. 8-10 g option
Baking dish 24-26 cm.

Cooking method

  • Just in case, I warn you: my flowers are artificial, live petunia is poisonous!
  • The recipe for this cake, wonderful in every respect, was presented to me by one of my favorite members of the forum, Lyudmila Lu_Estrada, so that I would share it with you! I share!
  • First, a little background. This recipe was found by Luda in an old cookbook called "In Heaven with The Hungry Monk" - "In Heaven with the Hungry Monk". This recipe is called: The Original Hungry Monk BANOFFI PIE - The original recipe for Banoffi pie from the Hungry Monk.
  • Bananas + Toffee (var. Condensed milk) = Banoffi pie!
  • Well, with the name, with grief in half, sorted it out, let's start cooking!
  • The recipe is the simplest, it is prepared very quickly and hassle-free. The only thing is, before you start cooking, make sure your cream is really whipping! And then I also had a lot of things written on my box ...
  • First, I will describe how to work with the dough, and then I will give the easiest option - with cookies.
  • So, in a food processor or in a blender bowl (I have a liter one, it fits quite well) we break flour with butter and salt into small crumbs.

  • Add the egg and once again run the processor for a short time, just to stir the mass a little.

  • We wrap the dough in a bag and put it in the refrigerator for 20-30 minutes.

  • Then, we take half of the dough and distribute it with our hands or with a small rolling pin along the bottom of the mold (I have a 24 cm mold.) By the way, here the mold does not have to be detachable, the main thing is that the sides are vertical, and not "frying pan". The walls of the basket, after baking, move away from the mold themselves. You can just turn it over on your palm and that's it!

  • From the remaining dough, make two sausages approx. 48cm. and put them on the sides of the form:

  • Now we distribute the dough along the walls with our fingers, making high sides, not lower than 4 cm. The dough is very soft, plastic and easily lends itself to such manipulations. If it sticks to your hands, just dip your fingers in the flour.

  • The dough must be pricked with a fork or a special needle roller. It is believed that you need to put a sheet of parchment on the dough and press it with beans or peas on top so that the dough does not deform, but I did not find so many of the above legumes in my bins and decided, but, it will do!

  • We bake at a temperature of 190-200C for 15 minutes (with a bean load), then remove the load and bake for another 5-10 minutes until golden brown. I just baked an open basket at 190C for 25 minutes.

  • It remains only to cool it down and fill it with goodies. What we will do.
  • For the convenience of working with boiled condensed milk, I advise you to hold a little jar in hot water before opening it. Condensed milk will become soft and very easy to smear. We dump the condensed milk into our basket and distribute it along the bottom.

  • Now you need to cut the bananas into slices of such a thickness that, after laying, they do not reach the top of the walls about 1 cm.I got slices 2.5 cm thick.Place them tightly on condensed milk:

  • Now whisk the cold cream with sugar and instant coffee until creamy.
  • Using a pastry bag or a large syringe, distribute our cream over the top of the bananas and lightly sprinkle with ground coffee on top.

  • As you can see, on closer inspection, my cream didn't whip as expected. I had to resuscitate them with gelatin dissolved in warm milk. And it still didn't help much, but it didn't affect the taste at all. By the way, if you want the cream to hold its shape for a long time, then you need to dissolve the gelatin in hot milk, cool it, add it to the whipped cream, and whisk lightly again. It turns out almost a soufflé. It reminds me of ice cream!

  • Juicy, crunchy dough, not sweet, but on top ... non-melting ice cream with a light coffee flavor! Mmm! Vesch!
  • Now the second option, lightweight... We buy shortbread cookies, break them into small crumbs and mix them with melted butter. We distribute this mass in the same way, in the form of a basket, and send it to the refrigerator to freeze. All! Further according to the recipe. Can you imagine how simple everything is ?! Yes, finally! True, here we need a detachable form. When the mass of cookies and butter hardens in the refrigerator, you need to walk with a thin spatula along the walls of the form, separating our basket. Then carefully remove the sides of the mold and use the shoulder blades to transfer the basket from the mold to a dish or onto a nice tray. And then fill it with anything!
  • By the way, if you like sweeter pies, I warn you right away, add more sugar to the cream. The pie is really almost not sweet, but only slightly sweetened. For me personally, this is his charm, but my husband asked to sprinkle his piece with powdered sugar.
