Chicken with tomatoes and olives

Ingredients

chicken thighs 1200 g
for the marinade:
shallots (or red onions) 5 pcs (2 pcs)
garlic 5 teeth
thyme 8 twigs
olive oil 3-4 tbsp. l
balsamic vinegar 2 tbsp. l
tomatoes in their own juice 550-600 g
salt 1 tsp
sugar 1 tsp
pitted olives 100 g
freshly ground black pepper taste

Cooking method

  • Chop the onion and garlic, transfer to a pickling container.
  • Add olive oil, balsamic vinegar, salt, sugar, freshly ground black pepper, thyme leaves and stir.
  • Tomatoes (it is better to take peeled, skinless) crush with your hands, add together with the juice to the sauce.
  • Wash the chicken, dry it, cut off excess fat.
  • Transfer to a container for the sauce, add olives, stir. Refrigerate for 24 hours.
  • Chicken with tomatoes and olives
  • Transfer the chicken and the sauce to an ovenproof baking dish.
  • Bake for about an hour at a temperature of 220C degrees. Turn the chicken pieces a couple of times while cooking.
  • Serve immediately with new potatoes or rice.

Firstly, everyone has different tastes, and secondly, as it turned out, tomatoes in their own juice are quite salty (Nizhyn, for example).

I made a sample at the rate of 1 chicken paw per person.
Thyme (I don't have it) replaced with a pinch of rosemary and a leaf of dried purple basil, olives for olives (which was found).
