Ingredients

Wheat flour, premium * 800 ml.
Hercules (long boiled) ** 300 ml.
Water (36 degrees) 500 ml
Salt 2 tsp
Fresh yeast 25 gr.

Cooking method

  • Pay attention, flour and rolled oats in milliliters!!! For those who are more comfortable in grams, see Note

  • Pour rolled oats into a bowl, crumble yeast, add water (I also added 1.5 tsp of sugar), stir and leave for 20 minutes in a warm place

  • Add salt and gradually add sifted flour. The dough must be viscous

  • Put the dough into bread tins (I lightly greased with vegetable oil)... Sprinkle with rolled oats on top (I have a "fast" Hercules)

  • Put in a cold oven, set the temperature to 200-220 degrees Celsius. (I left the dough for 30 minutes, then I just turned on the oven)... Bake for 25-30 minutes.

Now I bake it all the time for my household: I ate a couple of sandwiches, like a portion of oatmeal, which they don't really like, not like different sandwiches. And for me it is very convenient: a few minutes for filling the ingredients and after 2 hours it is already cooling down, wrapped in a towel, a loaf.
For myself, I slightly modified the recipe: Ingredients (in order of bookmark) Finnish oat bread (oven):
1. Water - 500 gr.
2. Vіvsyani plastіvtsі "EXTRA" - 130 gr.
3. Wheat flour, premium grade - 440 gr.
4. Salt (2 tsp) - 11 gr.
5. I also added sugar (1.5 tsp) - 5 gr.
6. Fresh yeast 25 gr. I replaced with dry "SAF-LEVYUR" (about 5 tsp) - 18 gr.

Total with a bucket 1638 gr. - container 536 gr. = only 1102 gr. ingredients

Bakery: MIRTA BM 2088.
Program: No. 4 "Superfast".
Crust color: "Light".
Cooking time: 1:52.
As a result, weight: 1010 gr.

This time, for some reason, the roof sagged a little, which is clearly visible in the section: Finnish oat bread (oven).
Is it because of the sugar?

I've already seen this topic, went in, read it and that was it. And today I went in again and I really wanted to bake this bread right away. She got up and went to the kitchen. It's good that the oatmeal was in stock. I rarely find fresh yeast on sale here, but the other day I bought it, and now I regret that I bought a little.
Everything is done very simply and quickly. The hercules mixture started to play well. I kneaded the dough. But then I messed up. I decided that I have a large shape, 10 * 30 (metal), I will bake bread with one loaf. I also doubted that it was necessary to make two rolls, as in the recipe, but I put all the dough in one mold, it turned out 3/4. I put it in the oven for proofing. I come to turn on the oven, and my dough is "running" from all sides, there is not much at the bottom of the oven. I took it out and let's divide it into a second form, silicone. The dough did not settle, it was airy, even after my mockery of it. But now I know for sure that this norm is for 2 forms !!!
And when it's baked, it's so beautiful, fried. I sprinkled it with flax seed, but then everything fell. I immediately cut off the crust and with butter, mmm, how delicious. Bread is just a SONG. The pulp is not moist, soft, airy, but the crust is crispy. Very, very tasty bread. And even more so it is done very simply. I will bake this bread regularly now. Convenient when there is no time in the HP oven.
