Cabbage cutlets with yogurt sauce

Ingredients

White cabbage 1 kg
Semolina 0.5 cups
Milk or water 0.5 cups
Eggs 2 pcs.
Chopped crackers 0.5 cups
Vegetable oil 3 tbsp. l.
Black pepper or pepper mix taste
Salt taste
Parsley a few twigs
For the sauce:
homemade yogurt 0.5 cups
garlic 2-3 cloves
dill 2-3 twigs
salt taste
cucumber optional
olive oil optional

Cooking method

  • Peel and chop the cabbage. Fold into a saucepan. Add hot milk, you can half with water. If you are fasting, add only water. Simmer until tender, about 40 minutes (if the cabbage is old). Pour semolina into the finished cabbage in a thin stream, stirring so that there are no lumps. Simmer for another 5-10 minutes.
  • Remove from heat, add egg and yolk, season with salt and pepper to taste. Form cutlets from the chilled mass with wet hands, moisten them in egg white, roll in breadcrumbs. Fry in vegetable oil.
  • During the fast, you will have to do without eggs. The semolina will help the cutlet mass to keep its shape.
  • I always cook for vegetable cutlets yogurt or yogurt sauce. You can make sour cream sauce, but it is better to take not fatty, 15%. It is advisable to weigh the matsoni - place it in a tissue bag so that the excess liquid is glass.
  • 1. Very tasty sauce with garlic. To do this, pour a couple of garlic cloves with salt. You can add dill or mint greens.
  • 2. The Greek dzatziki sauce is also suitable. To prepare it, rub a fresh cucumber on a fine grater, let it rest for a few minutes. Squeeze out excess liquid. Combine with yogurt (yogurt), garlic crushed with salt and dill. You can add olive oil, black pepper. Wine vinegar is sometimes added. I don't add, the acid in the yogurt is enough for me.

The recipe for cutlets is taken from the book "About tasty and healthy food", published in 1952. Cutlets always turn out to be very tasty, they are easy to mold. They are good both hot and even cold. Suitable for fasting cabbage stews in water and eggs are removed.
