Ingredients

Flour 2 st
Salt 0.5 tsp
Egg 1 PC
Sunflower oil 1 tsp
Water 120 ml
Vodka 1.5 tsp
Filling:
Minced meat 250 g
Bulb onions 2 pcs
Salt, ground black pepper taste

Cooking method

  • Dough: in a bucket of HP (bowl) put 4 tbsp. l. (with a slide) flour, salt, oil. Add boiling water, knead the dough. I kneaded on the program "Pelmeni". Allow to cool slightly, add the egg, vodka and the remaining flour, knead a smooth dough, more flour may be needed, it all depends on the size of the egg and the moisture content of the flour. The main criterion: the dough should stop sticking to your hands. Put the finished dough in the refrigerator for an hour (it can be longer).
  • To cook stuffing : add grated onion, salt, pepper, herbs to the minced meat, knead well, leave to ripen.
  • After an hour has passed, divide the dough into 12 parts (if small yantsy) or into fewer parts for larger ones. Roll each bun into a circle, put the filling on it, fold it in a crescent, carefully seal the edge (if the edge is pinched with a defect, then the juice will flow out and burn during the baking process). Put the yantyhi on a DRY pancake maker (frying pan, iron sheet). As it roasts, the yantyh begins to swell, increase in size. Once one side is browned, turn over. When the second side is also browned, you can put them vertically and fry the fold, and then remove, coat with butter. The cooking time for one yantykh is about 15 minutes and depends on its size and thickness.

Moreover, what is interesting, either there were such times, or people, but they put us literally in the middle of the master's yard, here they have a barbecue nearby, and the owners, and children, and chickens, dogs, cats. Rural idyll, in short. We sit. The owner brought wine, vegetables, cut the kebab and pickled it. The hostess comes, we start a conversation about "salt-matches-hunger-devastation" and all that stuff that befits that time ... They started talking about the cuisine of different nations and, here it was, and she suggested that we should think of the most yantyi. I kneaded the dough right in front of us, chopped the lamb filling. The dough is rested, she stuck them on and puts an iron sheet on an open fire ... She ignited it and well, throw yanty at it! This is my yantyshochki (well, from the palm, no more), and hers is 2 times more. I was stunned: on a dry leaf, on an open fire ... my dear ... How delicious it was. Meanwhile, the owner set the barbecue to fry. It was getting dark. The sun fell over the sea, cicadas chirped, it smelled of heated steppe, sea and lavender ... And somehow it happened that the table turned out to be a common one, the owners sat with us, the kids played at our feet mixed with dogs and cats ... You you cannot imagine this bliss ... this pristine silence of the Crimean evening, filled with a choir of cicadas and the crackle of fire ... these smells ... this dark, deep blue Crimean sky with huge stars ... since then I see this picture as alive. Since then I love yanthi, make them ...Where are those people? What happened to them? But a deep bow to them for that evening, for the feeling of peace and quiet and for the culinary experience ...
