Ingredients

Brotola 0.5 - 0.7 kg
Shrimp (fresh or frozen, preferably tiger) 200 - 300 g
Squid 1 - 2 pcs.
Potatoes 4 - 6 pcs.
Cream 150 g
Butter (for frying) 1 tbsp. l.
Unrefined sunflower oil (for frying) 1 tbsp. l.
Flour 20 g
Bulb onions 1 - 2 pcs.
Cheese (hard or semi-hard) 100 g
White wine 100 g
Salt, black pepper, herbs taste
Seasoning for fish CYKORIA taste

Cooking method

  • !!! Brotola is a fish that belongs to the cod family, but tastes better and has a richer taste. This fish, as a rule, is sold without a head and tail, all that remains is to defrost and lightly wash (it has no scales).
  • Preparation
  • 1. Remove the seafood from the freezer, defrost it.
  • 2. Put the potatoes to boil in their skins, when boiled - let cool, peel and cut into small pieces.
  • 3. Prepare the fish, cut into steaks; lightly salt, pepper, you can sprinkle a little with seasoning for fish, grate and let it brew (15 minutes).
  • 4. Prepare thawed seafood accordingly (peel, rinse, remove intestines from shrimp, chop squid).
  • 5. Finely chop the onion, sauté in a frying pan in vegetable oil, remove.
  • 6. Fry the seafood in a frying pan (in a mixture of butter and sunflower oils, over high heat, always without a lid, otherwise they will give juice; about 3 minutes).
  • 7. Put seafood, put fish in the same pan, reduce heat and fry (simmer) until tender (about 7-9 minutes).
  • 8. In a saucepan, prepare the sauce: sauté the flour in a small amount of oil (you can use what is in the pan with fish), add wine, cream, spices; salt, warm up.
  • 9. Add seafood and potatoes to the fish, pour over the sauce; add a little water if necessary (there should not be a lot of liquid!).
  • 10. Sprinkle with fried onions on top, then cheese and bake in the oven, about 10 minutes. Remove from heat and let the dish "rest" (brew) for several minutes. When serving, sprinkle with finely chopped herbs.
