Creme brulee in a multicooker Steba DD1

Ingredients

heavy cream 30-35% 500 ml
yolks 4 things
vanilla sugar (vanilla) 1 pack
Brown sugar 2 tbsp. spoons
sugar 50 g

Cooking method

  • Pour cream into a saucepan, bring to a boil, stirring occasionally, but do not boil. In another container, mix well the yolks and sugar 50 g, but do not beat. Add vanilla sugar. Add half a glass of hot cream to the yolk mixture with sugar and stir. Then pour in the remaining cream and mix gently.
  • Pour the resulting mixture into ceramic molds (ramekins) - I have about 180 ml each.
  • Pour hot water into the Headquarters (I - in a steel bowl), put a rug, on top of a stand for vegetables, so that it is convenient to take out the molds later. We put the mold so that the water almost completely covers it.
  • I closed the lid, set the languor mode to 82 degrees. for 55 min. When ready, we take it out, let it cool and put it in the refrigerator for at least 4 hours. Sprinkle on top with brown sugar and caramelize (who has a special gas burner) I don't have yet, but will soon be)
  • Can be done in half the size, so that it is enough for 1 mold
