Sugar 150 g
Margarine 190 g
Wheat flour 225 g
Sour cream 1 tbsp. l.
Water 2 tbsp. l.
Baking powder 1 tsp
Vanilla sugar 1 tsp
Fine salt pinch
Nuts (hazelnuts) 60 g
Lemon zest from 1 pc.
Filling:
Frozen cherries 1-1.5 stacks
Potato starch 1-2 tbsp. l.
1 cup = 250 ml
Margarine for lubrication 1 tbsp. l.

Cooking method

  • This cake deserves to be called a cake. The dough is very tasty, a bit like muffin.
  • Previously, I often used it as a base for cakes (I did not always use nuts). It goes well with various creams.
  • Today I propose to bake in the form of a pie, as it was in the original recipe (in the magazine "Smak" for 1995)
  • Try it! It's not difficult at all. And you will like the result.

  • Remove margarine from the refrigerator in advance.
  • Do not defrost cherries (pitted).
  • Grate the lemon zest on a fine grater.
  • Peel the nuts (hazelnuts, walnuts or almonds). Measure (I took hazelnuts this time), chop in a food processor (blender bowl).

  • We will use nuts for both the dough and the filling.
  • Dilute sour cream with milk (you can replace them with 3 tablespoons of cream).

  • 4. Mix flour with baking powder, add 3 tbsp. l. chopped nuts. Combine with the beaten mass. Whisk again.
  • The dough should look like a thick mashed potato. If you run a path along it with a spoon, then it will remain on the surface.

  • Dip the cherries in starch without defrosting.

  • Assembling the cake.
  • 1. Near a pressure cooker pan (or oven dish), carefully coat the bottom and sides with margarine (in the pan, up to about halfway up).
  • 2. Divide the dough into 2 parts. Place half on the bottom. Straighten and make small bumpers.

  • 5. Place the 2nd part of the dough on top. (It is more convenient to do this by spreading out 1 spoonful and then spreading.)
  • 6. Flatten the top.

  • 1. Bake the cake on program "Baking", pressure - 2, time - 50 minutes.

  • The amount of dough at the beginning of the recipe is calculated for the size of the 22 cm mold.
  • For a larger form (25-26 cm), increase the amount of dough by 1/3.
  • Ingredients for a big pie:
  • Sugar - 200 g
  • Margarine - 250 g
  • Eggs - 4 pcs.
  • Flour - 300 g
  • Salt - a pinch
  • Sour cream + water (or cream) - 4 tbsp. l.
  • Nuts - 100 g
  • Baking powder - 1 tsp.
  • Zest of 1 lemon
  • Vanilla sugar - 1.5 tsp
  • Cherries - 1.5-2 stacks
  • When leveling the top of the dough, make it taller towards the edges. This is necessary so that when baking, a slide does not turn out on top. (In a multicooker / pressure cooker, the top is even!)
  • Bake at 200 deg. about 45 minutes.
  • Decorate to your liking.
  • (In the photo, unfortunately, the most unpresentable option: the purchased chocolate syrup has spread and looks sloppy.)

Note

Advice.

1. Cherries can be used fresh or from compote. Be sure to dry them well.

2. No crumbling starch was used in the original recipe. But this is how I like the pie better: the dough is never dough, and the cherries retain their juice completely. (Be careful - the juice may splash when biting!)

3. If you do not have nuts, then simply exclude them from the dough, and use ground wheat crackers to sprinkle the bottom layer.

4. For decoration, a few cherries can be dipped in melted white chocolate, and the leaves can be made from tinted mastic or marzipan. The cake itself will look good if sprinkled with chocolate icing or melted dark chocolate.

5 When baking in other multicooker / pressure cookers, adjust the time yourself. In Polaris, at a pressure of 2, the heating temperature is somewhere around 135 degrees.
