Cooking method

  • Whether it is possible to call this very tasty and delicate pie a pie of the Tatar national cuisine, I don’t know, but we bake it for all holidays, along with the primordial Tatar pastries, such as gubadiya, chak-chak and many others.   • Pour warm milk into a bowl, dissolve yeast, sugar. Add the egg, cottage cheese rubbed through a sieve (if the cottage cheese is grains), flour and knead the dough, let it rest for ten minutes under a napkin. Then put salt and softened butter, knead thoroughly (a bread maker can perfectly do all this for you). The finished dough should be soft and sticky. You can leave the dough in the bread maker, let it fit. After about 30 minutes, knead slightly and leave the dough to come up completely.
  • At this time, we prepare the cream: mix the eggs with sugar (do not beat!), Only mix well, add sour cream, vanillin and carefully so that the cream does not liquefy, mix. Put in a cool place until the dough comes up.
  • As soon as the dough is ready, take 350 - 400 grams of dough from it (for one pie). We round it off, let it rest under a napkin or a bowl for about 10 minutes and roll out a circle sufficient for it to be enough to lay it both on a frying pan (28-30 cm in diameter) and on the sides. Pour the cream, cut the edges of the dough from the sides into strips (fences), alternately wrapping each in different directions, you can simply overlap, carefully laying it directly on the cream. Let it come up for 30 - 40 minutes and send it to the oven preheated to 190 * C, reduce to 180 * C and bake for 40 - 50 minutes, making sure that the cream does not swell in the oven, but bakes evenly.
