Cooking method

  • Pistokkeddus are crispy biscuits with soft marzipan filling, often filled with aromatic orange extract. Before baking, such cookies are rolled up in a tube, which is bizarrely bent, or they are given the shape of animals and birds, rings, horseshoes, letters. Cookies are considered festive, they are prepared for Easter, name day.
  • Sardinian cuisine is rich in sweet recipes. They got to the island in different ways, gradually adapted, and today the vast majority of them are prepared exclusively from local products.   • Combine flour, eggs, yolks (the whites will go for the glaze), bacon, sugar and lemon zest and knead an elastic dough. I got it too steep (I think because of "Macfa") and I added more butter. Refrigerate for at least 30 minutes. While we are preparing the filling.
  • Grind the nuts with a blender. Heat water and sugar in a saucepan, add nuts and simmer over low heat, stirring occasionally for 5 minutes. Do not boil strongly, when the mass cools down, it becomes denser.
