Cooking method

  • A set of spices can be added in this version:
  • 0.5 g ground nutmeg
  • 0.3 grams of ground ginger
  • 0.3 grams ground cardamom
  • 0.5 gram ground sweet red pepper
  • 2.25 grams of ground white pepper
  • The meat should be cold, slightly frozen.
  • Grind (I put a grid with small holes in the meat grinder).
  • Break the ice in a blender to make snow.
  • Put meat, salt and spices, snow into the processor. Grind everything well into a homogeneous paste.
  • Grease the form with fat or oil.
  • Lay out the meat paste.
  • Smooth the top with wet hands.
  • Make incisions.
  • Cover the molds with foil or a lid.
  • Bake at 180 degrees for 60-90 minutes.
  • Shortly before being ready to open the lid, brown the meat loaf.
  • Allow to cool.
  • I put the molds in a large baking sheet and poured hot water for min. I baked 20 at a temperature of 220. Then I reduced the temperature to 180.
  • Or bake for 12 - 15 minutes at 180 ° C, then reduce to 140 - 150 ° C.
