Diet waffles (based on Ilya Lazerson's recipe)

Ingredients

flour 1 grade 200 g
egg 1 piece
water 300 ml
baking powder 1 tsp
salt 0.5 tsp
vegetable oil (for lubricating the mold) 1-2 tsp

Cooking method

  • 1. Sift flour with baking powder and salt into a bowl.
  • 2. Add egg and water, stir with a silicone spatula.
  • 3. Wait for the waffle iron to heat up.

I was inspired by Ilya Lazerson's recipe, described in the book "Culinary Emergency", to make these waffles.
These waffles do not lose their crunchiness and are good both with jam and jam, and with unsweetened fillings like red fish.

"Now about the waffles, too crispy, but not sweet. Their recipe is simple. For 190 g flour: 2 yolks, 270 milliliters of water and 1/4 to 1/2 teaspoon of baking soda, which is not quenched with vinegar.
The rules and features for preparing dough and baking are the same as for sweet waffles.
Only the baking result is completely different. These waffles, unlike sweet ones, are tough even when hot, they cannot be processed (bending, cutting, rolling), fragile and brittle. So the unsweetened waffle slices will look like rectangles or ovals, depending on the shape of your waffle iron.
These wafers are very tasty, crunchy and very much like traditional factory wafers, sometimes sold in stores in the form of rather large plates.
On the use of unsweetened waffles: they are very good, especially when warm, as an accompaniment to some hot dishes, instead of bread; and if you layer them with cream, you get a cake. "

I changed the recipe a little, and this is what happened.

If you hold the dough in the waffle iron for a short time, then they are pale and look like store waffles in packs. If you hold it longer, they become "tanned" and look like familiar waffles.

They also remind me of the taste of "waffle" crispbreads, which are found on sale in the departments of healthy food.

Attention! At the time of baking, steam comes out of all the cracks in a closed form, much stronger than when baking butter waffles. Don't panic! It should be so. After a minute, open a little and check how the waffle is doing there.

After baking the first waffle, evaluate the result and decide whether to add 1-2 teaspoons of flour or leave it as it is. This advice applies to those who bake with flour higher varieties. With 1st grade flour, you usually don't have to add flour to the house.
