Chicken, better large
Chicken marinade filling:
Lemon 1 PC.
Cumin, rosemary, pepper (white),
coarse salt
Softened butter 0.5 pack
Garlic 1 clove
Smoked bacon 30 g
Garnish:
Lightly cooked whole potatoes
(without skin)

Cooking method

  • Gently make a very deep (almost to the neck) and wide pocket between the breast and skin with your fingers in the chicken. Make 2-3 cuts on the legs to the bone.
  • Marinade filling:
  • Cumin (pinch), rosemary (leaves with 2-3 sprigs), crush pepper in a mortar, add lemon zest, lemon juice, pour over again, add 1 finely chopped garlic clove (do not crush), finely chopped bacon, salt, mix and combine with butter. Mix everything well.
  • Push 2/3 of this mixture into the chicken pocket, carefully stroke the chicken breast so that the filling is evenly distributed under the skin. Grease the legs with the rest of the mixture, paying particular attention to the cuts. Push the rest of the lemon into the chicken.
  • Lay the chicken on the sheet with the breast up (important - the breast will be saturated and become very juicy).
  • Combine the cooked potatoes with peeled and cut into slices of celery root, salt, pour over with olive oil, stir from bottom to top. Put the chicken on a tray around. Sprinkle the garnish with rosemary leaves.
  • Everything is in the oven preheated to 220 degrees, the cooking time depends on the weight of the chicken, on average it is 1.5 hours.
  • Pour the resulting sauce over the chicken before serving.

Note

This is a very tasty and beautiful dish. I served it on a ceramic baking sheet (and baked in it).

2. did you boil the potatoes as in the recipe? she will then be in the oven for an hour and a half with chicken. not much for her - and cook it, and bake?

1. Cuts on the legs across the bone. The legs did not dry out because they were greasy with marinade, and the chicken itself was quite fat. The time in the oven is taken at the rate of 35-45 minutes. for 1 kg. chicken weight. My chicken was about 2 kg.

2. I didn't cook the potatoes, poured boiling water over the fire for 2-3 minutes - then the olive oil is absorbed into the scalded part and the potatoes only get tastier.
