Bigos with beef Combined (multicooker-pressure cooker Brand 6051)

Ingredients

Beef (pulp) ~ 500 gr.
White cabbage ~ 500 gr.
Sauerkraut with cranberries 150 gr.
Sauerkraut with beets 150 gr.
Korean carrots (optional) * ~ 200 gr.
Bulb onions 1-2 pcs.
Dried porcini mushrooms 20 gr.
Prunes up to 10 pcs.
Dry red wine 40 ml
Bay leaf / black peppercorns 1 pc. / 2-3 peas
Salt taste
Vegetable oil ~ 1 tbsp. l.
Herbs: cilantro or parsley to serve

Cooking method

  • Pour dry porcini mushrooms with a glass of boiling water and let it brew for 30 minutes.
  • Cut the beef pulp into cubes with a side of about 1.5-2 cm.
  • Chop fresh cabbage. Strain the liquid from the sauerkraut.
  • Cut the onion into half rings or "feathers".
  • Pour vegetable oil into the bowl of the pressure cooker. Enable mode FRYING 15 minutes. Heat the oil for a couple of minutes. Put the beef and fry until the end of the mode, stirring a couple of times.
  • Then lay the rest of the ingredients on the meat in layers: onions, white cabbage, both types of sauerkraut, Korean carrots, soaked mushrooms (drain the liquid), prunes. Add bay leaves and peppercorns. Salt to taste, but not forgetting that the sauerkraut and carrots are already with salt.
  • Pour in wine and add hot water 2-3 tbsp. l.
  • Enable mode EXTINGUISHING 15 minutes.
  • Sprinkle with chopped fresh herbs, or maybe fresh green onions before serving.

Note

Bigos is a cabbage dish that you can add anything to.
Any meat can be used: beef, pork, turkey and even smoked meats: brisket, hunting sausages, ham, raw sausage, etc. in any combination.
Mushrooms can be used fresh, frozen, dry and even salted.
You can add a tomato or a spoonful of tomato paste.
Instead of prunes, or even with it, you can put a sweet and sour apple, cut into slices.
In short, by varying the composition of the ingredients, you can get your favorite dish with a new taste every time.
* I needed to attach leftover Korean carrots. If you do not use it or use fresh grated carrots, then the bigos must be seasoned with spices: red hot ground pepper, thyme, marjoram, cumin - to taste.
