Fig and Grape Pie

Ingredients

For the test:
flour 300 g
butter 200 g
powdered sugar 100 g
vanilla on the tip of a knife
lemon peel 0.5 h l
For soufflé:
sour cream 20% fat 350 g
eggs 3 pcs
sugar 100 g
lemon peel 1 tsp
vanilla on the tip of a knife
For filling:
fresh figs 4-5 pcs
seedless grapes 100-150 g
cognac (optional) 1 tbsp
baking dish with a diameter of 22 cm

Cooking method

  • 1. Beat flour, icing sugar and chilled butter cut into pieces with a blender until finely crumbled. Add vanilla and lemon zest and quickly knead the dough with your hands.
  • 2. Distribute the finished dough in the shape, raising the sides by about 2.5-3 cm. Put the figs and grapes cut into quarters and sprinkle with cognac.

  • 3. Separate the whites from the yolks and beat until soft peaks with a pinch of salt. Beat the yolks with sugar into a thick creamy mass. Add sour cream, the remaining zest and vanilla to the yolk mass and beat everything together until smooth. Then, in several steps, stir in the whipped proteins and pour the resulting mass into the mold.

  • 4. Bake in an oven preheated to 150-160C for 60-75 minutes (until a dry skewer).
