Mushroom soup in a multicooker Brand 37502

Ingredients

Fresh mushrooms 200 BC
Pearl barley 3/4 Art.
Kefir 1 tbsp.
Onion 1 PC.
Carrot 1 PC.
Celery (root) 50 g
Vegetable oil 2 tbsp. l.

Cooking method

  • Soak the pearl barley in kefir overnight. Then rinse well. In the "Baking" mode, fry the onions, carrots, celery, add mushrooms (I boiled them beforehand). Switch off MV. Add barley, salt, pour hot water, turn on the "Soup" mode 1 hour 30 minutes by default. When serving, sprinkle with herbs and add sour cream.

After soaking in kefir, pearl barley in soup, porridge, filling for the pie is much softer and acquires a slightly sour taste. Anna, I don't know anything about fermentation, but soaking in kefir gives a completely different taste and boiling of barley. In cutlets I put oatmeal soaked in kefir (instead of a roll). As for the chickpea, I can't say anything, I haven't tried it. But something tells me that it is worth experimenting.

I thought it over and decided that I would not try to soak chickpeas in kefir, since fermentation occurs when soaked in soda. It is unlikely that this effect is equally achieved in acidic and alkaline media. But then I decided to try soaking brown rice - I just can't cook it normally: if I cook it like pilaf on a sensory program, it turns out undercooked. I tried it in a slow one for the night - I got a smear. And I can only eat this rice.
By the way, I really liked the pearl barley after kefir
