Ingredients

fruits (cherries, apples, plums, etc.) 1 kg
Sprinkle on fruit:
starch 1 tbsp. l.
sugar 2-3 st. l.
Dough:
eggs 5 pieces.
sugar 200 gr.
flour 200 gr.

Cooking method

  • First, prepare the fruit: wash, peel, cut if necessary. Lay out a baking sheet with parchment for baking, then pour the fruit there in a good layer (the cherries are laid out in one row, and the apples are 2-3 cm). We put this in the oven at t 140 for 10-15 minutes (until the dough is cooked).
  • Preparing sprinkling for fruit: mix sugar and starch in a separate plate.
  • Prepare the dough: beat eggs with sugar with a mixer until fluffy white foam until 4-5 times increase. Then we take a fork and gradually sift (I have a special sieve) mix with the dough so that it does not settle. Stir very gently from top to bottom.
  • As soon as the dough was prepared, we take out the fruits from the oven, they could already start up the juice. We sprinkle all the fruits with sugar and starch sprinkles, and then pour the dough on top. And we immediately send it to the oven for 35-37 minutes at t 140. You cannot open the oven for the first 20 minutes. At the end of the time, it is better to cover the hot cake with a towel so that it does not sink.

Note

If you wish, you can roll it inside with a hot roll of fruit, after placing it on a towel. For a roll, it is better to reduce the number of eggs, because the biscuit is too high and difficult to roll. Prepare the dough for 1 egg 40 gr. sugar and 40 g flour.
We use fruits according to the season. And cherries and cherries, now apples. Apples were also combined with red currants and frozen cherries.
