Ingredients

Submidors 2 Kg
Spicy pepper 2 pcs
Vegetable oil 1/3 cup
Tomato paste 100 g
Salt, sugar
garlic 3-4 tooth.

Cooking method

  • Peel tomatoes, cut into cubes, garlic into plates, hot peppers without grains - into rings.
  • In a saucepan with a thick bottom, heat the vegetable oil, slightly heat the garlic until transparent, add the tomatoes, pepper, tomato paste and cook over very low heat, stirring occasionally. Season with salt, pepper, add sugar. I add a lot of sugar (tomatoes are still sour). Cook for a total of 2 hours (until boiled 2 times). Low temperatures and long periods of time make a jam-like consistency.
  • Can serve as a seasoning for any dish (meat, fish, eggplant) and much, much more.

Note

Matbuha is a sauce, salad, base for other dishes. For her, you can take soft tomatoes, substandard.
I took the recipe from Ilana's website. She has another way of making matbuha with bell pepper. Last year I made both recipes, even closed them for the winter. Well, very tasty. I am spreading the recipe now at the request of the girls who cooked shashuka (scrambled eggs). There is no photo, because there are no cheap tomatoes yet, and our own ones are not yet ripe

I cook in a simple multicooker Panasonic mhs 181. I let it boil on the express and then stew for about 4 hours.True, I go and stir. The thickets sit down. Of course, it evaporates faster on the stove in 2.5 hours and with the lid open. But! it's not so hot with cartoons.

Nata, Matbuha is really a tomato sauce, it resembles a good spicy ketchup. Matbuha has roots from Morocco, and ketchup has roots from Malaysia :-)))
Nat, the composition is very natural, not even vinegar. Garlic, hot pepper, salt and sugar "tune" the taste for yourself. As the tomatoes went - all substandard in Matbukha. I cook in a cartoon to the consistency I need, the longer - the thicker at the exit.
I don't put tomato paste (for me it is not a natural product), I replace it with tomatoes.
I pour the hot sauce into jars, screw it up and store it in the apartment.

I use:
1. to the pasta;
2. it is excellent to quickly stew or bake vegetables under Matbuha, for example, beans, zucchini or eggplants, pour peppers (from the freezer in winter);
3. I put the fish fillets (white or red) tightly on the foil and on a baking sheet, pour Matbukha. I bake for 20 minutes.
4. Elegant dressing for borscht.
5. Just dip a piece of challah or pampushka, or another bun in Matbushechka and mmmmmmmmmm ....

Didn't try the pizza spread.
